Close to where I used to work, in the centre of beautiful Rome, there was a small family-run business that was making fresh pasta with the most delicious homemade sauces.

 

Each day was a surprise as there was no fixed menu. Best thing yet? I used to grab the meal as a takeaway and enjoy it on the Spanish Steps, admiring the amazing architecture and blending in with locals and tourists alike. This is a remembrance of those days, and even though I haven’t made the pasta from scratch, the homemade pesto really brings that familiar feeling back.

 

How to make fresh basil and pine nuts pesto

 

Pesto can be found in various combinations of fresh herbs, nuts, parmesan, a hint of garlic and of course, extra-virgin olive oil! This Fresh Basil and Pine Nuts Pesto it’s a classic. Here is what you need to do

 

Cook the pasta al dente – bring a pot with salty water to a boil, add the spaghetti and cook according to the packaging instructions. Don’t be afraid to taste one, just to be sure!

Keep some pasta water for the sauce – pesto can be quite dense therefore, adding some of the pasta water will create a smooth sauce to coat the spaghetti. Reserve a mugful of cooking water and add just as much as you need to form the sauce.

Add butter – this will add a little bit of sweetness, contribute to the richness and will bond everything together into a silky, incredibly indulgent pasta dish.

This Spaghetti with Fresh Basil and Pine Nuts Pesto has got us hooked! It' so comforting, indulgent and flavourful.

Ingredients

  • 160 g spaghetti
  • 40 g unsalted butter
  • 80 g pesto sauce
  • a mugful of the pasta water
  • 30 - 40 g freshly grated parmesan
  • salt and pepper according to your taste

Instructions

    1. Cook 160g of spaghetti in a large pot of salted boiling water according to pack instructions.
    2. In a large pan, heat the butter over low - medium heat just until it starts to melt, then set aside.
    3. Reserve a mugful of the cooking water, then drain the pasta well. Add the pasta to the pan, and mix with the melted butter.
    4. Add the pesto and pour a little cooking water, stir together until combined. Season with salt and pepper.
    6. Divide between 2 bowls and add grated parmesan.
