What ingredients you’ll need for this mushroom and halloumi burger

 

  • Burger Buns or Brioche Buns: I like using brioche buns as they are tastier, however, burger buns work equally well with this recipe.
  • Halloumi Cheese: Use about 200 g for 2 burgers. 
  • Large White Mushrooms: Wipe clean the mushrooms and remove the stalks. 
  • Lettuce Leaves: Wash and pat dry a few lettuce leaves and roughly tear them using your hands. 
  • Pickles: Cut a few pickles into thin slices. They will add the right acidity that combines beautifully with the rest of the flavours.
  • Radishes: A few radishes, thinly sliced. 
  • Cherry tomatoes: 3 -4 thinly sliced cherry tomatoes. 
  • Microgreens or Mixed Salad: Use a handful of mixed salad that’s available to you. 
  • Tomato Sauce: You can use tomato sauce or ketchup. I found this smoked tomato sauce at Marks and Spencers (available in the UK)

WHAT IS HALLOUMI MADE FROM?


Halloumi is a type of cheese with a semi-hard consistency, typically made from the milk of goats, sheep or cows. It has been enjoyed and used in cooking recipes for many years in Cyprus where it has its origins. In recent years, halloumi has become popular around the world and can be found in most supermarkets.

 

HOW TO COOK HALLOUMI CHEEESE?

Halloumi has a higher melting point. I suggest you use it grilled, baked or fried without losing its shape.

Ingredients

  • 2 burger buns, cut in half
  • 200 g halloumi cheese, thickly sliced
  • 2 large flat white mushrooms, wiped clean and stalks removed
  • 1/2 small red onion, sliced
  • 2 pickles, sliced
  • 4 leaves lettuce salad, roughly torn
  • a handful of micro greens or mix salad
  • 3 - 4 cherry tomatoes, thinly sliced
  • 2 radishes, thinly sliced
  • tomato sauce or ketchup (as much as you like)
  • 2 tablespoons olive oil
  • salt
  • pepper

Instructions

  1. Heat a griddle pan or a barbeque until it's hot.
  2. Season the mushrooms with olive oil, salt and pepper and cook for about 2 - 4 minutes on each side.
  3. Place the thick slices of halloumi cheese on the griddle pan or barbeque and cook for 2 minutes on each side or until lightly charred.
  4. Cut the burger buns in half and cook them on the grill as well for about 1 - 2 minutes.
  5. To assemble the burgers, pour some tomato sauce on the base of the burger. Then add the lettuce, red onions, cherry tomatoes, mushroom, pickles, radishes and halloumi. You can add more tomato sauce over the halloumi and finish with some microgreens or mixed salad then add the burger top and serve immediately.

Notes

  • You can use a brioche bun or burger bun for this recipe.
  • I like the combination of flavours in this recipe, however, I encourage you to mix and change any ingredients with what you have available or what you like most!
